Okay guys, this is one recipe that you’ll DEFINITELY want to bookmark!📚 I eat this granola almost every time that I’m at my Aunt & Uncle’s house here in Austin. (My aunt always has a jar full in her kitchen!) I usually have it at their house with whole milk, or almond milk and we always add fruit to the bowl too. (Our favorite combo is adding mangoes or bananas🍌 + a little bit of Rice Chex!)
It’s honestly one of the best granolas I’ve had, and it’s sooo easy to make! All of the ingredients are things that you might already have in your cupboard (minus the nuts – but I picked all of those up at Whole Foods!), so you’ll probably only have to pick up a few extra items from the grocery store.
For the Homemade Granola
The recipe below makes two full cookie sheets of granola. You can cut the measurements in half if you only want to fill one sheet, or if you don’t want to make that much! (I always make the full amount, and keep the remainder in a jar to use throughout the week!)
WHAT YOU’LL NEED:
- 4 cups old-fashioned rolled oats
- 1/2 cup whole wheat flour
- 1 1/2 cups raw almonds (cut in half)
- 1 cup walnuts (cut about the same size as almonds)
- 1 cup pepitas (hulled pumpkin seeds)
- 1 teaspoon fine seal salt
- 1 teaspoon ground cinnamon
- 3/4 maple syrup (I used this Cinnamon Maple Syrup!🍁)
- 1/4 cup brown sugar
- 1/3 cup coconut oil or extra-virgin olive oil
- 2 teaspoons vanilla extract
- 2 cookie sheets
Granola Cont.
STEP ONE:
Mix all dry ingredients REALLY well in a large bowl. Heat wet ingredients, except vanilla in a small pot until the sugar melts. (About 2 minutes) Cool slightly and add Vanilla.
STEP TWO:
Pour wet ingredients into the bowl with the dry ingredients and mix well. Ensuring that there are no dry spots in the mixture.
STEP THREE:
Spread the mixture evenly onto two cookie sheets, and place in the oven at 300 degrees for 20 minutes. Make sure to place the cookie sheets toward the top and bottom of the oven to ensure heat circulation.
STEP FOUR:
Remove the mixture from the cookie sheets and stir well, returning the top sheet to the bottom rack and the bottom sheet to the top rack. Bake for another 2o minutes.
STEP FIVE:
Remove from the oven and stir well, leaving granola to cool on the cookie sheets. Store in an air-tight container.
After I made the granola, I took it one extra step further and made peach🍑 and blueberry yogurt parfaits for Nathan and I one morning! We were having a lazy Saturday morning a few weekends back, so I thought it would be a nice little treat to have on the patio with coffee. ☕️
WHAT YOU’LL NEED:
- Peaches
- Blueberries
- Greek Yogurt
- Honey
- Homemade Granola
STEP SIX:
Wash blueberries and peaches. Cut and prepare peaches. 🍑
STEP SEVEN:
Add one layer of greek yogurt on the bottom, then one layer of granola, then another layer of yogurt, and so on…
STEP EIGHT:
Top with peaches and blueberries, or your favorite fruit! Drizzle with honey and ENJOY. 😋
